3 Fresh Chillies
Add ginger and garlic paste and green chillies to the chicken, give it a mix a leave to marinate for about an hour. In the meantime peel and cut the potatoes into quarters and fry them.
Peel and slice the onions and fry till golden brown. Dip tomatoes in boiling water and peel off the skin and blitz with the chopped tomatoes. Boil the eggs.
In our preheated pot add the 3tbls of oil, add in whole spices and then add in the chicken.
Cover and cook till water has evaporated.
Remove the cooked chicken and in the same pot add the oil heat up for about a min and then add in cumin tomatoes, salt and spices. Cook for about 5mins and now is the time to adjust the spices if you want. Add in the chicken and gently stir in and squeeze in the lemon and crush the onions in, but leave some fried onions aside for later.
Boil the rice in salted water but don’t fully cook it as when we layer it the rice will cook further.
Take the saffron and In a small frypan heat it up till its crisp and then crush it in a pestle and mortar or with a back of a spoon till its like powder. Add a few drops of water and add this to about 5 tbls of boiled rice. This saffron rice we will decorate the top layer of our biryani.
To layer our biryani take a large pot add some water and line the pot with foil ,this will help with the steaming process to cook the rice and chicken nicely.
First layer the rice then lentils then chicken then peppers and chillies and then chopped coriander ,do this twice..
