How to make Spring Rolls at home. This week we are making a very popular, classic Indian snack for any occasion especially when entertaining guests. Spring rolls can be made with vegetables & chicken, or you can also leave out the chicken if you wish.
This recipe makes 35-40 Spring Rolls

You will need:
1 chicken fillet, chopped into small cubes
85 grams butter
1 potato, diced into small cubes
1 carrot, finely sliced with a Julian cutter
½ red ½ green pepper cut into small pieces
100 grams sweetcorn
100 grams boiled Spaghetti
The spices are:
Salt to taste
1 tspn cumin powder
1 tspn coriander powder
¼ tspn turmeric
1 tspn grinded fresh green chillies
3 tbspn chilli sauce
1 tspn garlic paste
To Garnish
A handful of spring onions and fresh green corriander
1 tblspn sesame seeds
Juice of 1 fresh lemon
And finally the main ingredient is a packet of spring roll pastry
And to stick the pastry down, ive made a paste with flour and water.
Oil to fry.
Method:
Preheat the pot and melt the butter. Add in the chicken and chilli sauce,mix in and cover and cook till water released from the chicken has evaporated. Add in the rest of the ingredients apart from the the garnishing ingredients and spaghetti.
Once mixture is cool add in the boiled spaghetti and sprinkle over the garnishing and sesame seeds and juice from 1 lemon.
So I’ve got my pastry sheets and I’ve got my paste which I made from plain flour and water .
paste on the sides of the pastry sheet, take about a tablespoon and just spread it along, fold the sides, start rolling and make sure the feeling is intact,don’t pack it too tight otherwise when frying the pastry will burst so make sure it’s nice and even all along.
Fry in hot oil, make sure you put in the spring roll slowly you don’t want the oil to sputter everywhere. Fry on medium to high heat, so they cook evenly and golden brown in colour and nice and crunchy.
