Marinate 1 kg boneless chicken thighs or chicken fillets in 2 tbs tandoori masala powder, 1/2 tsp salt and pour in 3 tbs oil.
Leave for an 1 hour in fridge or overnight.
Preheat oven to 180 degrees and place chicken pieces on a greased tray and bake till chicken is cooked through.
In a wide pot pour in 4 tbs oil, fry 1 chopped onion till lightly golden, throw in the spices, 1 tbs tandoori masala powder, 1/2 tsp turmeric, 1 tbs cumin and coriander powder, 1 tbs kashmiri chilli, 1 tsp paprika, 2 tsp garlic ginger paste, salt to taste.
Cook on low heat, stirring constantly for 20 seconds.
Pour in 250 grams tomato passata, 1 tbs tomato puree, 1 tbs brown sugar, 1 tbs almond flour,
2 tbs coconut milk powder.
Mix everything and simmer on low heat for about a minute.
Throw in the cooked chicken pieces and coat in the masala well. You can squeeze some fresh lemon juice if you like
Drizzle over some cream and garnish with chopped fresh coriander.
Serve with rice or naan and enjoy! ❤️😋
