Chicken Cheese Balls are a mouth watering delicious fun sized cheesy fried snack! Family favourite appetisers, for holidays, get-togethers, entertaining guests or anything really! Ingredients:

1 cup cubed Chicken

1 cup grated Cheese (red & white)

1 cup Pasta

1 cup mashed potato (not completely mashed)

1 and half teaspoon cumin powder

1 tablespoon Jalapeno Sauce

1 teaspoon Black Pepper

Salt to taste

Handful or Corriander/Cilantro

Fresh Lemon Juice (half lemon)

Garlic cloves & Chillies, add to taste

Eggs & Breadcrumbs for dipping

 

Method:

In your preheated pot, add a little bit of oil as well as the chicken and black pepper. Mix that together and cook the chicken on the low to medium flame. Occasionally give it a stir so that it doesn’t burn or stick to the bottom.

While that is cooking, grind your chilli and garlic cloves into a paste using a pestle and mortar. You could also blitz them in a machine.

When the chicken has cooked, add in your garlic and chilli paste, cumin powder and Jalapeno Sauce. Keep the heat on low, and mix that in.

When the chicken and spices have mixed together nicely, take it off the heat and let it cool for about 10 minutes.

After it has cooled, you can now add in the pasta, potatoes, cheese, some salt and a squeeze of lemon to give it some zing. Finally, chop some coriander inside, and mix it well.

Now you are ready to roll them up. After rolling them up into balls, put them in the fridge for 30 minutes so they can maintain their shape.

After taking them out of the fridge, you are now ready to dip them into the egg and breadcrumbs. If it is easier for you, then take a spoon and dip the ball into the beaten egg mixture. Then take it over to the breadcrumbs and with your hand, coat the ball.  That way it doesn’t get too messy. Dip it into the egg mixture for the second time, and double coat them in the breadcrumbs. Repeat this for the rest of the balls.

Now you can begin frying. To make sure if the oil is hot enough, drop a breadcrumb inside and if the oil starts to bubble, then you are ready to start. Fry them on medium to high heat and take them out when golden brown.

If you have any leftovers, then you can store them in the freezer to use when you need to.
