Cake Ingredients:

200g Grated Carrots
200g Wholemeal Self Raising Flour
2 Eggs
175g Dark Brown Soft Sugar
150ml Sunflower Oil
100g Toasted Pecans
100g Sultanas
Grated Zest of 1 Orange
1 tablespoon Ground Mixed Spice
1 teaspoon Bicarbonate of Soda
Frosting Ingredients:

450g Cream Cheese
1/2 teaspoon Ground Cinnamon
50g Butter
1/2 cup Icing Sugar
Glaze Syrup:

Juice of 1 small Orange
1 tablespoon Lemon Juice
75g Dark Brown Soft Sugar
